Ah sorry, I totally missed the first part. My bad. Personally, I don't think you can wrong with either. I would lean toward Italy and try to hit up some combo of Rome, Milan, Florence, Venice, and the Amalfi Coast (realize you can't hit all of them). Rome has so much great history.
What are you guys looking to prioritize? Nightlife, weather, food, etc.? I'm personally a sucker for Italian food. Nice clubs in both spots although not sure if better ones in Italy might are in Rome or Milan. I think it still might be worthwhile to try to split the trip. Instead of 1 week in each spot, maybe it's 3 days in Barcelona and 4 days in Rome?
as someone who did a post grad trip with the boys, think Spain is a better move. Tbh don't see the allure of Munich/Amsterdam. We did a trip through Northern Spain (Madrid --> Bilbao --> Barcelona) and then went to the French Riviera in about a 20 day trip. So much more fun and had a great relaxation component being able to go to the beaches in Southern France + Monaco and get a boat. Having gone to Italy, it is a bit more expensive in my opinion so if I could have redone it, would have held off although I intend to revisit in my late 20s.
done rome twice in 3-4 days each, tons of fun. it's action packed but if you're not clubbing it's doable. you can't go deep, but unless you have local connections and speak italian, you can't go deep anyway
Hard to go wrong with either, both have amazing food and boozing cultures. For what it's worth, Spanish women are way more loose than Italian ones in my experience, so if you're looking for some wilder nights I think Spain would have the advantage.

far too many stops. not gonna be fun at all. Each spot should get at least 3-4 days.
you don't have to pick unless cost is an issue, 3 nights each in Rome & Barcelona, just won't be able to see multiple cities in either country
You can do halfsies with Barcelona and italy,ut count rome out; you'll need at least a week in rome.
