Minor Change: Economics to Management Information Systems
I go to a small regional school, definitely a non-target. Have an average GPA but excellent extracurriculars and pretty good work experience (I'll be doing a Corporate Strategy fellowship with JPMC this summer). My goal is to break into strategy consulting after undergrad (I am a rising Junior), preferably at MBB. The graduates from my school who have gone into consulting have done so with Big 4 firms however they weren't strategy arms. Currently: Finance major/Economics minor. How would switching my minor to MIS and adding a Fintech concentration serve my goal of entering MBB in the long run? Will this make me more versatile or equipped for the future of Finance/Consulting?

Honestly it will not matter for strategy consulting recruitment, just do what you're more interested in and optimize for things outside of the classroom (referrals, leadership, making sure your resume is good, interview prep, having fun)
Later down the line or for other jobs, I guess I'd say MIS would be marginally more advantageous. Finance and economics are interchangeable enough (as they should be since finance is sort of just a targeted study of economics), but I could envision some scenarios where having MIS or fintech on your resume could be good
