My 2 cents is highly dependent on your profile but in general whilst going on exchange adds value to a profile it will not allow you to fully recruit from the Bocconi platform. You will get some credit for the added cultural experience at interview but you will not be treated as being part of the Bocconi candidate pool.

If you are Italian going to Bocconi on exchange might open doors to returning to Italy to work full-time later in your career (and you might be able to recruit from the platform). If you are British this exchange will be valuable in the sense that you will have a broader appreciation of different cultures and the experience will make you seem like a more well-rounded candidate (at least on paper).

This would be the same for other targets in other geographies i.e. if you went on exchange to HEC or UPenn the experience would benefit your profile but unless you are French or American you will have pretty much zero likelihood of using the local recruitment platform and even then it's a stretch.

EDIT: Yes you do have to specify that you are an exchange student

Given your profile the exchange would add good value for you (and would allow you to bring Italian up to fluency which will be useful for recruitment).

You still will not be considered in the Bocconi pool for recruitment given that it's only an exchange. The only real way to tap into a target's recruitment pool is to go the Master's route.
