Graduating Junior w/ Policy Background Looking for a Pathway

Hi, I'm a sophomore in University. Next year, I'll be graduating as a junior (May 2017).

I kind of had a strategy throughout college of leaving as many doors as possible open for me down the road. That's why I took a generalist major (ECON), went deeply into math, and tried to get experience in a decent variety of industries. As I'll be spending my final year in college on the job hunt, I was looking to hear about what private-sector jobs (IB, consulting, or beyond) that my experiences may have entirely closed the door on, as well as what may still be open beyond the purely policy-driven direction that I'm clearly headed towards.

I'm entirely open to any and all additional suggestions about industries and roles that you think may be well-suited given my background, which is as follows:

Education Background:
*School: Non-Target (50-75, monolithic public university)
*Major: Economics (Liberal Arts) w/math+econometrics focus, honors
*GPA: 4.0
*Extracurricular: Chair of a student organization with a $~400,000 annual budget and presence in four continents. TA for an upper-level Econ class.

Full-Time Work Experience:

*Internship I: Education policy consulting (private, no-name firm) in Singapore for the country's national university system. Two months.

*Internship II: Financial regulation policy research and outreach (globally recognized think tank) in Washington D.C. Four months.

*Internship III: Energy policy lobbying (regional but recognized firm w/ ~$10b annual revenue). Four months.
