Are AUDENCIA/Grenoble/NEOMA good schools?
Can I get into IB or S&T from these schools?I know they are not the best ones but can I still have a high paying job & fulfilling career out of them?

These school will very unlikely lead you to a position at a BB or good IB, unless you manage to accumulate some outstanding internships first
What would you do if you were in my shoes? I've seen some people in IB BB from Audencia on Linkedin and some in HF/S&T... I'm gonna be in the MiM programme

Besides networking, you should try to do the exchange program at Warwick if you are at GEM

Are Audencia, Grenoble and Neoma good? Yes, they are good and they will land you a job upon graduation in France. However, you need to keep in mind that they aren't in the top 5 in the country, so it will be tougher for you.
Can you have a fulfilling career out of them? I am sure you can, as fulfillment does not equal working at a top 3 BB or EB.
You will have to network the sh*t out of it to break into top banks, maybe you can first do an M&A corpo internship, then M&A internship at a French bank (BNP, SG, CA) and after that a third (and final internship) at an EB or BB leading to a full-time position at said bank. It will definitely be easier to break into an EB in Paris (as opposed to into a BB) as networking will take you further at boutiques.
